So, a few guys showed up to work early tonight, which let me come home at 5:20. Since Kristine went shopping for me today, I had all my ingredients ready to go to make her dinner. The result... Pan-seared scallops on a cauliflower puree with tarragon snow peas and carrots. All washed down with a nice glass of Bushmills (can't have St. Patty's day without a little Irish Whiskey). I got it from Cooking Light and it turned out about as well as I could have hoped. The puree and veggies were easy, but I've never cooked scallops before, and the thought of ruining them (knowing how expensive they are) kept running through my mind. Luckily, they turned out perfectly and Kristine loved it. It would have been the perfect meal except I sliced my left thumb with my brand new stainless steel forever sharp knife. I felt it slide down my finger. Amazing how much blood there was. If I lived in the City of Beachwood, I definitely would have called the squad for that one! Anyway, here is the picture of dinner.
